le bowl

There’s a really neat French café here in LA called Zinque, and they make this seriously amazing menu item called Le Bowl. I’m a little bit obsessed with it, and decided to attempt to recreate it at home last night. It’s quite a simple bowl actually – brown rice, cheese, avocado, tomato and arugula, topped with smoked salmon (you can get it on its own or with chicken instead at the restaurant) – but there are a few ingredients that take the bowl from good to great; sriracha, a bit of mayo, and some chopped fresh cilantro.

I never would have thought to add sriracha mayo to brown rice but I think it is what makes the bowl, and helps to tie all the flavors together. I know that mayo gets a bad rap but it’s really just egg yolks and oil, and the amount I used only adds 100 calories per person. Don’t skip it!

Unfortunately I don’t have an exact recipe nor did I really measure anything, but if you want to recreate it at home, here’s what to use and the steps to follow to make two bowls:

mayonaisse, sriracha, comte cheese, parmesan cheese, sliced tomato, diced avocado, brown rice, smoked salmon, arugula, cilantro

Mix two tablespoons mayonaisse and a few dashes sriracha in with your cooked brown rice. Top with a handful of arugula, some cilantro, your avocado and tomato, and small pieces of comte. Drizzle with olive oil and salt and pepper to taste. Nestle your smoked salmon into the bowl, and top the dish with some shaved parmesan. Voila – an easy, healthy dinner or lunch, and not many dishes to clean up!
